The A2 milk variety lacks a form of ß-casein proteins called A1, and instead contains the A2 form. Our A2 milk comes from the indigenous breed cows and has anti-bacterial, antifungal and antioxidant properties. Our Gir cows eat specially produced leaves, straw and fruits that are safely cultivated using the hydroponic method. This advanced method results in higher levels of natural nutrients in the ghee. Gir cows are pasture-raised on our organic farm. A2 milk is a great source of Vitamin A, Vitamin B, Calcium, Riboflavin and Potassium. It also contains a significant amount of Omega-3 fatty acids which potentially helps in reducing cholesterol levels. The Potassium present in A2 milk helps in controlling your blood pressure.
A2 milk paneer is soft, delicious, and high in protein, with around 28g of A2 protein per 200g serving. Our A2 milk paneer is naturally processed and we curdle the milk using ingredients like lemon or vinegar. Curdled milk is strained and pressed thereafter. It is free of preservatives and is a rich source of vitamins, minerals, and antioxidants. Compared to regular paneer, A2 milk paneer has a fresher taste and softer texture. Paneer is generally a common source of protein for vegetarians and hence it has become an integral part of Indian cuisine. After the production of the paneer, it is stored in the cold room. Until the product reaches the customer, the cold chain is maintained thoroughly.
A2 Bilona ghee is revered for its purity and nutritional richness. Milk is first boiled over a fire to disinfect it and to concentrate the milk solids. The boiled milk is cooled and a spoonful of natural curd starter is added to ferment it into yogurt. A wooden churner called “Bilona” is used to churn the yogurt in a clockwise and anti-clockwise motion. This process separates the butter and buttermilk. The butter is skimmed off the top after the churning. After that the butter is slowly heated until it melts. As it boils, the milk solids will separate out and the ghee will turn golden yellow. The liquid ghee is then strained through a cloth to remove any impurities. The production of A2 Bilona ghee is a meticulous process.
